Ingredients
  • 1/2 watermelon or a small watermelon, cut into bit size chunks
  • 2 cucumbers cut into bite size pieces
  • 1/4 cup fresh mint cut into thin strips (or chopped is fine as well)
  • 1/4 - 1/2 cup Feta (depending on how cheesy you are) cut into bit size pieces
Vinaigrette, in small separate bowl add:

Instructions
  1. Mix watermelon, cucumbers, mint, and feta together in a bowl.
  2. Whisk maple syrup and vinegar together in a separate bowl.
  3. Add Kosher salt ( or sea salt) and fresh cracked pepper to your liking and toss the salad.
  4. Now taste and remember....FEED YOUR SOUL
