Slow Cooker Vegetarian Tortilla Soup

I love to make soups in a slow cooker. It really brings out the flavors of the vegetables and not to mention it’s so easy!

Serve with tortillas and avocados and you’ve got a delicious meal any time of year.

We actually still use this retro slow cooker! I’ve only had to replace the lid (which I broke).

Add all ingredients to slow cooker:

1 cup dried Pinto beans, soaked overnight
1 15ounce can or box Fire Roasted Tomatoes
1 medium White Onion, diced
1 cup organic frozen Corn
4 whole Serrano Chiles
4 cloves Garlic, minced
4 cups low sodium organic Vegetable Broth
4 cups water
½ tsp. dried Oregano
¼ tsp. Chipolte Chili Powder
½ tsp. Smoked Paprika
1/4tsp. Himalayan Pink Salt
Dash of Cayenne Pepper
Pinch of dried Thyme
Pinch of freshly ground Black Pepper

Cook 5-6 hours or until beans are soft
