These are a quick and easy meal.
Serve with a salad and you are good to go.
Preheat oven to 400 degrees F
Slit each pepper lengthwise. Carefully remove loose seeds and veins, keeping stem intact. You will be stuffing the peppers later.
Rub each pepper generously with Olive Oil and place on baking sheet
Combine: Rice, Yogurt, 1 cup of the Cheese, Beans and Cilantro in a medium bowl.
Season with Salt and Pepper
Stuff each pepper with the mixture.
Sprinkle remaining cheese on top.
Bake in oven 20-25 minutes, until Peppers are crispy tender and stuffing is heated thoroughly.
Garnish with fresh cilantro.
