Portabello Sloppy Joe

I just love the versatility of mushrooms – especially Portabellos. By substituting them in this recipe, you won’t even miss the meat!

Plus they pack lots of nutrition. They are low in calories and fat, have a balance of protein and cabs and contain potassium, fiber, B vitamins, copper and selenium.

Serve this on your favorite type of bun and you have a quick, nutritious and healthy meal.

Ingredients:
1 tablespoon Extra Virgin Olive Oil or Coconut Oil
1 pound Portabello Mushrooms, wiped clean and diced
1 medium White or Yellow Onion, diced
3 cloves Garlic, finely chopped
½ cup Green Pepper, diced
1 cup Kidney Beans, cooked
2 tablespoons Tomato Paste
3 tablespoons Brown Sugar
1 tablespoon White Vinegar
2 tablespoons Worcestershire sauce, regular or vegan
¼ cup Ketchup
¼ cup BBQ Sauce
1 tablespoon Mustard

  • Heat the oil in a skillet over medium heat and cook the mushrooms until golden brown – about 7-8 minutes
  • Add the Onion, Garlic and Green Pepper to the skillet and cook until veggies are tender – about 5-6 minutes more
  • Add the Tomato Paste to the pan and cook for about 1 minute
  • In another bowl add the remaining ingredients and stir together
  • Add this mixture to the skillet and simmer until it becomes a thick sauce
  • Serve the Sloppy Joe mixture on your toasted bun
