Pasta with Tomatoes, Capers and Olives

Pretty much everyone loves pasta and we know about the nutritional benefits of tomatoes but are you familiar with Capers?

Capers are the unopened buds from the Capparis spinosa plant found mainly in the Mediterranean. They are dried in the sun and then covered in a salt brine. But these little buds pack a whole lot of nutrients!

Low in calories, they contain many phytonutrients, antioxidants (anti-aging!) and fiber. Plus vitamins A and K, niacin and riboflavin and calcium, iron and copper. And they are also good for your skin and hair.

They can be used as a compliment to almost any food. But make sure to rinse them thoroughly to help reduce the salt.

Instructions
  1. Bring a pot of salted water to a boil. Add the spaghetti and cook until al dente (about 1 minute less than the suggested cooking time on the package). Drain but keep 1/3 cup of the cooking water.
  2. While the spaghetti is cooking heat the Olive Oil in a large, deep skillet.
  3. Add the Garlic and Hot Red Pepper Flakes and cook for about 30 seconds.
  4. Then add the Tomatoes, Capers and Olives and cook over medium heat, stirring until just hot – about 3 minutes.
  5. Add the pasta to the skillet along with the reserved cooking water.
  6. Season with Salt and Pepper.
  7. Transfer to a serving bowl.
  8. Sprinkle the Basil on top and the Parmesan (if using).

Goes great with a fresh salad and if you like, a glass of your favorite vino!!
