The main ingredient in this salad is Chickpeas or Garbanzo beans. So like all beans, they are high in fiber, protein and many other nutrients.
The seaweed flakes give it the fish flavor. Seaweed is high in minerals, vitamins, amino acids, is anti-oxidant and helps produce collagen (helps with sagging skin, wrinkle and lines). Make sure the brand you use comes from an area of the world with as pure water as possible.
When making this salad, think Tuna salad and add or change any ingredients you would normally put in your Tuna salad.
Put Chickpeas in food processor and pulse. Consistency should be choppy like Tuna.
Add Chickpeas and all remaining ingredients thru Black Pepper to medium size serving bowl and mix with a spoon.
Cut off the top of the Tomatoes and scoop out the pulp. (Put the pulp in a bag and freeze to use when making soup or other dishes) Or just eat it!!
Fill the scooped out Tomatoes with the Chickpea mixture and serve around a bed of lettuce and sprouts.
Note: You can also use the filling for sandwiches.
* Use Follow Your Heart Soy Free Veganese or any mayo you prefer but this brand has no soy or Canola Oil.
