Mix and Match Breakfast Sandwiches

I have never been a “traditional” breakfast eater and smoothies just don’t get it for me either, so sandwiches are a breakfast staple. I usually make them open faced so there aren’t as many carbs.
Depending on how you mix up the ingredients and condiments, you can have a variety of meals with different flavors. And they only take a few minutes to make – even less if you don’t toast the bread. Plus they don’t have to be just for breakfast!

Basic Ingredients: Organic is best!
Avocado
Tomato
Sprouts
Roasted Red Pepper

Other:
Eggs (scrambled or hard boiled)
Eggplant
Roasted Veggies
Sauted Greens (Spinach or Kale)
Feta
Hummus
Beans (can be refried)
Guacamole
Purple Onion

Condiments:
Mustard: Poupon, spicy, honey
Organic Mayo
Olive Oil
Balsamic Vinegar
Jalapenos
Pepperoncini

Sprouted Breads:
Grain
English Muffin
Tortilla

Combinations:

  1. Basic ingredients on an English Muffin. Choose your own Condiment(s)
  2. Mediterranean: Olive Oil and Balsamic Vinegar, Eggplant, Roasted Red Pepper, Feta
  3. Mexican: Tortilla, (Refried) Beans, Avocado, Tomato, Jalapeno
  4. Scrambled egg, Sprouts, Feta
  5. Hummus, Roasted Red Pepper, Feta, Pepperoncini
  6. Sauted greens, Tomato, Feta, Balsamic Vinegar
  7. Hard Boiled Egg, Avocado, Sprouts, Organic Mayo

 

So there’s a variety of breakfasts for a week. I know once you get started, you will come up with some delicious combinations of your own.

 

Oh, and don’t forget the classic PB and J but you can change it up with a different nut butter such as Almond, Cashew or Sunflower. And use organic preserves without added sugar.
