Hot or Cold Soba Noodles with Pea Pods and Red Peppers

This is a quick and easy main dish with some very nourishing vegetables.

It takes about 20 minutes to prepare and it’s great hot or cold.

Red Bell Peppers are full of antioxidants which benefit your immune system and keep your cells healthy. In addition, they contain caR2_canstockphoto6569439lcium, iron, magnesium potassium, zinc, and Vitamins A,B, C and E.

Snow Peas are more common in Asian stir fries but since they are raw they add a nice “crunch” to this recipe. They are a good source of Magnesium, Potassium, Fiber, Folate, Iron, Manganese and Vitamins B6, A, C, K

Cook noodles according to directions.

While they are cooking whisk together: Tamari, Sesame Oil, Olive Oil, Rice Vinegar (or Lime juice), crushed Red Pepper, 3 Scallions and ½ Tablespoon Cilantro

After noodles are cooked and drained, add Snow Peas and Red Bell Pepper to noodles and toss with other ingredients to coat.

Before serving, mix in remainder of Scallions and Cilantro and top with toasted Sesame Seeds.

Can be served hot or cold.
