I rarely make desserts, but this one is super simple and tastes amazing! Plus I like seeing the expression on peoples faces when they find out the main ingredient.
You can make this with either Avocados or Young Coconut – swap out those two and the rest of the recipe is the same
Avocados are a healthy fat – meaning they are good for you. The have both soluble and insoluble fiber and contain vitamins B,K, and E. According to the California Avocado Commission: “One-fifth of a medium avocado (1oz) has 50 calories and contributes nearly 20 vitamins and minerals, making it a great nutrient dense food choice.”
Young Coconuts have enzymes to help with digestion and metabolism. They are an excellent source of potassium and B vitamins. You can make coconut water by scrapping out the coconut and blending it with the water from the coconut.
This adapted recipe can be served in parfait cups with fresh berries, as a cupcake frosting or fill a pie crust (no need to bake). It’s a healthy way to get your chocolate fix!
