Fig Bread

This delicious, light and tasty bread is good for breakfast, brunch or anytime with a cup of your favorite tea.

Makes 2 loaves.

  1. Preheat oven to 350 degrees F.
  2. Lightly grease and flour two 9x5 inch loaf pans.
  3. In a large bowl, mix together the Butter and Sugar, then add the Eggs and mix until blended.
  4. Add the Yogurt to the above mixture and blend well.
  5. In a separate bowl stir together the two Flours, Baking Powder, Baking Soda, Salt and Cinnamon.
  6. Add the dry ingredients to the bowl with the wet and mix just until combined.
  7. Fold in the Walnuts and chopped Figs.
  8. Pour the batter into the prepared pans.
  9. Slice two Figs and place on the top of each loaf.
  10. Bake for about 45 minutes, or until a cake taster comes out clean when inserted into the center.
  11. Cool for 10 minutes. Then remove the loaves from the pans and continue to cool on a wire rack.
