Carrot Top Crisps

Move over Kale chips and make way for another deliciously, healthy snack!

When I saw this post from Anisha at Heartful Earth Cuisine, I knew she had another winning recipe!!

You can tell a good cook when they use every part of the food (even the part most of us would throw away if we didn’t have bunnies!)

I made these last night and my husband ate practically the whole bowl. Of course, it was a little spicy for him! And since our dogs love Kale chips, they kept begging for more of these too.  These are a perfect snack for everyone.

  1. Wash and dry the carrot tops completely. Once dry, rip apart into chip size bits by hand, add avocado oil, chili powder, nutritional yeast and salt and mix well in a bowl.
  2. Then lay flat on a baking dish or tray. Roast in a preheated oven for about 8 to 10 minutes at 385 F.
  3. Feel free to experiment with how you season them. I really enjoyed the combination of chili powder and nutritional yeast. Would you to hear from you on how fast you ate them!
