Instructions
  1. Rinse and drain Lentils. Place in pot with 2 cups water. Bring to a boil, reduce heat and simmer until tender, 15-20 minutes, then drain.
  2. Heat 2 tablespoons water in a skillet over medium-high heat. Add Garlic and cook for about 1 minute. Add Mushrooms and Carrots and cook until tender, about 5 minutes. Remove from heat.
  3. In a bowl combine all other ingredients and whisk until well blended.
  4. Stir Lentils and sauce into the Mushrooms and Carrots in the skillet until well combined and the sauce is absorbed.
