I have been making this super easy, delicious recipe since the 70’s!
Appetizer or side dish, it’s always a hit.
Over the years, I have changed some ingredients:
Instead of marinated Artichokes, I use ones packed in water.
And now with so many choices for plant or nut based cheese, I have changed to using those rather than cheddar.
Plus you can substitute the eggs to make it VEGAN and use GLUTEN FREE bread crumbs if needed also.
But, as always, the choice is yours……
Makes about 20 squares.
Pre-heat oven to 325 degrees.
Drain the Artichokes saving the marinade from 1 jar. Chop Artichokes and set aside.
Pour the reserved marinade or 2 Tablespoons Extra Virgin Olive Oil into a small skillet and heat.
Add Onion and Garlic, stirring occasionally for about 5 minutes.
In a medium bowl, whisk eggs with fork and add all remaining ingredients including Artichokes and Onion and Garlic mixture.
Mix thoroughly and pour into a greased 8x12x2inch baking dish. Smooth top until mixture is evenly distributed in dish.
Bake in pre-heated 325 degree oven for about 30 minutes or until set and starting to brown at edges.
Remove and cool on wire rack.
May be made in advance and reheated at 325 degrees for about 10 minutes.
Also you can freeze them, defrost and reheat.
Best when served hot.
